How thick are the planks?

Very good. I used them over charcoal briquets, a friend used them on a gas grill with success as well. I think it's good to soak the planks for a minimum of an hour, but longer is probably a little better. When you put the plank on a charcoal grill the coals should still have a flame. It's important that the flame is hot enough to char the plank and as a result generate smoke. And, of course, the plank is wet enough not to ignite. With that said, I've only used the planks for grilling fish - specifically salmon.
