Great nutritional option

Hard To Say Whether I Love Bob's Red Mill or Teff Flour the Most
Teff tastes fabulous and is very high protein. It grows in both dry and overly wet conditions, making it an ecological seed to produce. It grows best in--surprise--Ethiopia, where teff is ground into flour and used to make injera. When I made injera several years ago it was a long process of letting the thin dough sour by adding yeast and keeping it out overnight. This Teff Flour from one of my favorite companies in the world, Bob's Red Mill, which is an employee-owned company, has a recipe for injera that's almost instant. I can't wait. Teff tastes mildly nutty and is a uniquely different flavor in a high-fiber grain. The only downside is that teff is lower in thiamine than many other grains, but anything said to be perfect is hyped. This is a superb product from an equally superb company. I was not paid in goods nor money to write this. Just an old woman who loves Ethiopian food and delighted with immigrants from that country and area.

exactly what I ordered
The flour came quickly. However, one of the bags of flour was open and flour had spilled into the box. I don't think this was the seller's fault. The box containing 4 bags of flour was not open. So I emailed Bob's Red Mill, sent photos, and they will replace that noe bag of flour.

Fabulous and delicious.
It works better than other wheat/gluten substitutes. It is like very fine sand and not like gum or caking flours, so instead of making elastic dough or crumbly pancakes, it makes fluffy, relatively light, sweet tasting baked goods with just enough flexibility to be successful. It also compliments cocoa and carob flavors. The only concerns for traditionalists might be that it, like any non gluten, can't ever be as tough as gluten and it has a dark color (due to a high percentage of bran rather than starch). It is filling, pleasant, and not expensive when compared to most wheat alternative or exotic flours.

For bread
I really, really wish I could get the hang of making injera. I mix this with millet and cassava for my bread and it's delicious. Adds a nutty, earthy depth that I love.

Quality
After eating injera bread my wife made from this flour, I realized we were consuming cheap, poor quality food from the other sellers. This is the true Teff flour you can ever enjoy with your zigni xebhi/tsebhi (Eritrean/Ethiopian traditional stew). I hope I will find this product every I need it. I don't mind the price, it is its rareness. It is not easy to find 25 LB bag of teff from a decent seller.

Integrity of the Brand Name
I've been purchasing Bob's Red Mill products for many years. This particular one has become unavailable at the health stores that normally would carry it. Teff flour probably isn't so popular but because I have committed to gluten free living, it serves as a substitute or addition to cake mixes and cookies from scratch. I love it because it gives a nutty, full bodied taste . This particular item is also Non-GMO. It offers healthy doses of potassium and protein per serving. The nutritional factor is the main element I pay attention to and the second factor is the way it can be used.
