I bought this to actually use to skin and carver up deer. It can be used to carve any type of meat, like filleting fish, chicken, pork, lamb, vegetables, etc. I needed a flexible blade that stays sharp to take the silver off of deer meat but that could also cut tendon and be used to debone and even skin deer to remove the hide. It's been very affective, I may get another to have two. Sometimes getting at the inside and back loins is difficult. A couple is slits with this knife and the loins pull right out. I know not everyone is butchering deer, this is just an example. This is an elegant knife and very sharp. It has an ergonomic comfortable handle, stays sharp, and cleans up easily. The handle can become slick when bloody or fat soaked but is does not stain. Just wipe it off and keep going. Its flex blade really helps get the most meat. It even carves turkey very well. It is designed well and uses carbon steel. Don't put it in the dishwasher. Hand wash it, and then put some olive oil on a paper towel, lightly oil it, and it should never rust. It does not come with a sheath, but the box is thin and designed for the knife so I didn't bother. The price is right! If you need to replace it for any reason, it won't break your bank. I'm sold on it!

simply put, it's an excellent filet knife! Looks good, feels right and makes quick work of fish, chicken, pork tenderloin. Makes quick work of veggies as well, especially savoy cabbage etc.

Knife comes nicely packaged, so you can gift as is. Seems to be of good quality and has a decent weight to it. It is extremely SHARP. I keep it in the box in the kitchen drawer. Went to take it out of the box for these photos and dropped it and cut my finger. 😂 So be extra careful when handling, not clumsy like me.

This is a high quality filet knife. Time will tell as to the durability, but initial reaction is that the fit & finish are excellent, comes in a well packaged box (storage case) and is razor sharp right out of the box. Ergonically speaking, it fits the hand perfectly. I would highly recommend as a buy for yourself or as a premium gift for a friend.

Razor sharp. Looks great feels great. Cuts through chicken bones like an Exacto knife. What more does a PitMaster need?

Love the look and feel of this knife. It's super sharp and it's great for performing thin slices in a straight line. My only wish is that the blade was a little thinner to allow it to flex and bend while you're removing the skin of a fish on a cutting board. This is why I gave it 4 stars. If you don't want the knife to flex like I did, then it's definitely a five-star knife.

Bought one of these for both of my sons who process their own big game. They are both very happy with the knife for boning out an animal. Holds an edge well and comfortable for long periods of meat cutting.

I have used it a few times now. Comes out of the box very sharp and has held an edge well so far. Has decent flesh and makes quick work out of fileting fish.

Update: Das Messer hat nach wenigen Wochen Rost auf der Klinge entwickelt was sonderbar ist, zudem scheint sich der Griff zu lösen.Der Verkäufer reagiert überhaupt nicht.nicht empfehlenswert ... Das Messer wird in einer Geschenkbox geliefert und man merkt sofort beim auspacken das es sich um eine richtig gute Qualität handelt.Es liegt sehr gut in der Hand mit seinem formschönen Holzgriff und ist echt Rasiermesserscharf. Die Verarbeitung ist insgesamt sehr hochwertig und edel.Ein echtes Profimesser zu einem wirklich fairen Preis...
